If food is meant to nourish us, why do so many people feel tired, inflamed, or "not quite right"?

That was me.

About 10 years ago, I went through a period of recurring mouth ulcers — sometimes up to twenty at a time — alongside ongoing skin issues. NHS tests came back inconclusive. I wasn’t unwell enough for answers, but I wasn’t well either. I was managing symptoms without understanding the cause.

Seeing a nutritional doctor privately was the first time food entered the conversation.

By reading labels properly, removing certain foods, and making targeted changes, the symptoms resolved. Not slowly — but clearly enough to make me stop and ask why.

Looking deeper at food and health

That moment sparked a deeper curiosity about food, gut health, and how modern diets quietly undermine wellbeing.

I trained as a Nutrition Coach, took part in Continuous Glucose Monitor (CGM) trials, and immersed myself in research around gut health, metabolic health, and prevention. The evidence was compelling: many diet-related health issues are not inevitable — they’re systemic, and often avoidable.

Discovering microgreens

It was during this time that I discovered microgreens.

Tiny plants with extraordinary nutritional density — rich in vitamins, minerals, antioxidants, and bioactive compounds. Simple, whole food with a disproportionately powerful impact.

Together with my husband Paul — who has a background in biology and biomedicine — we began growing microgreens ourselves. What started as an experiment quickly became part of daily life. We felt the difference first-hand.

We were also inspired by the principles of the Blue Zones — regions where people live longer, healthier lives not through restriction or perfection, but through simple, consistent habits: real food, daily movement, community, and purpose. That philosophy continues to guide how we think about nourishment, longevity, and prevention.

Enriched Being grew from that place.

We don’t claim perfection — but we are committed to doing better where we can, and improving as we learn.

Even the small details of daily life matter, which is perhaps why our two Scottish Terriers, Rufus and Flora, are never far from the rhythm of our work. They’re a reminder that wellbeing isn’t abstract; it’s something we live out, every day.
